Olive Tapenade


So when I finished the jar of Black Olive Tapenade I had bought, I decided to make my own to refill the jar. It’s simple and so tasty! (I just looked at the ingredients listed on the back)

Chop the following:
1 cup zucchini
1/2 of a red onion (Garlic optional)
1/2 cup red pepper
1 c olives (green or black – pitted and marinated)
1/4 c capers

4 T olive oil
1 tsp fresh thyme
1-2 T balsamic vinegar
S and P

1. Chop olives and capers separately in food processor.

2. Sauté red onion and red pepper and deglaze with balsamic. Then add thyme and zucchini. When cooked until softened, pulsate in the food processor.

3. Add all ingredients together with 2 T of olive oil and serve with pasta or on flatbreads. May add crumbled feta on top.
