Cobb Salad

imageLegend has it that this Amazing combination for a chunky Salad was created at midnight in 1937 by hungry owner of Brown Derby Restaurant in Hollywood. Bob Cobb threw together some leftovers and Thereafter Cobb Salad was put on the menu.

This is my version: (original uses Romaine, chicken and French dressing) no corn, but with a name like Cobb, why not?

Crispy bacon bits
Bleu Cheese
Hard Boiled Eggs
Sautéed corn off the “Cobb”
Avocados (slightly hard for cubes)
Cherry tomatoes halved
Red Onion
Baby Spinach or Arugula

Dressing

juice from one orange
1 T Dijon
1/4 c olive oil
